This South Indian Vegetable curry Recipe is a great, tasty curry for the vegetarian. Very healthy and full of nutrients and will fill you up like no other curry.

Ingredients for South Indian Vegetable Curry Recipe
2 tbsp sunflower oil
1 tsp mustard seeds
2 onions, peeled and sliced
1 tbsp ground coriander
1 tsp ground cumin seeds
2 fresh green chillies, deseeded and chopped
1 bunch curry leaves
1 tbsp garam masala
1/2 tbsp turmeric
1/2 tbsp chilli powder
6 tomatoes, chopped
2 sweet potatoes, peeled and cubed
2 potatoes, peeled and cubed
400ml coconut milk
200 g French beans
100 g handful of peas
150 g handful okra, sliced
Sea salt and freshly ground black pepper, to taste
Cooked basmati rice
Fresh coriander, chopped
Heat the oil in a pan and fry the mustard seeds for 2 to 3 minutes or until they start to pop.
Add the sliced onions and cumin seeds and cook for about 2 minutes until soft and then add the chopped chillies.
Once the chillies have softened too, add the curry leaves, coriander, Garam Masala, turmeric, and chilli powder.
Stir and cook over medium heat until the aromas come through, about 1 minute.
Stir in the chopped tomatoes and the add your potatoes to the sauce.
Pour in the coconut milk and cook until the potato is soft and cooked through about 30 minutes.
Throw in the beans, peas and okra and cook until they are tender.
Season and cook for a few more minutes until tender, then serve with some nice fluffy Basmati rice and a sprinkle of chopped coriander.
