This Quick Sweet and Sour Chicken Recipe is designed for a great midweek meal for 2 people.
It’s very tasty and very easy to make.

2 chicken breasts, chopped into cubes or sliced
1 tsp salt
1/2 tsp pepper
1 red pepper, thinly sliced
2 cloves of garlic, crushed
4 tbsp soy sauce
2 tbsp cider vinegar or red wine vinegar
2 tbsp of tomato ketchup
1/2 tsp crushed chilli (optional if you like it a bit spicy)
300g medium noodles, fresh or ‘straight to wok’ versions or rice
1 tbsp groundnut oil
2 spring onions, thinly sliced
Sesame seeds to garnish
Heat the oil in a wok or frying pan and then cook the chicken and season with salt and pepper.
Once cooked and slightly browned, remove the chicken from the wok and place on a plate.
Next, add the garlic and red pepper to remaining oil and chicken juices in the wok and cook for about 2 mins until softened.
Then add the ketchup, soy sauce and vinegar and quickly mix together until hot and then add the cooked chicken and noddles* and stir well coating the chicken and noodles.
*As an alternative you could not add the noddles and serve this with rice instead, if preferred.
Once hot carefully share on to 2 bowls and serve immediately with sesame seeds and spring onion.
