This is my version of a spicy marinara sauce recipe. This sauce is what I use for my Meatball Sub Sandwich and is also delcious with mozzarella sticks or even pasta.
Serves: 4-6 people

Total Time: 30 mins
3 tbsps. olive oil
1 onion, finely chopped
A carrot, finely chopped
1 stick of celery, finely chopped
1 red pepper, roasted and chopped
2 red chillies, chopped
175ml white wine
2 cans of chopped tomatoes
Half the tomato can of water
Salt and pepper, to taste
Start off by heating up a thick bottomed saucepan over a medium heat and then add the olive oil.
Once the oil is hot, add the chopped onions, carrot, celery and cook until they are soft so about 5 minutes. Then add the chillies and cook for a further minute.
Next add the wine and turn up the heat and reduce the wine down a bit. Next add the chopped tomatoes, water and salt and pepper and then simmer over a low heat for about 15-20 minutes with no lid.
Once the sauce is cooked allow to cook for a bit then blend until smooth.
If you want to make less just halve the ingredients but if not any leftover sauce can be frozen and used another day.
Another tip is to put all the ingredients into a soup maker and this still turns out well.
