This is a lovely mushroom soup recipe on a cold winters day and enjoyed with a nice loaf of bread from the bakery smeared with fresh butter.

Ingredients for Mushroom Soup Recipe
A large onion, sliced
1 celery stick, sliced
1 leek, sliced
50g Plain Flour
1-litre vegetable stock or chicken stock
200g Closed Cup Mushrooms, sliced
Salt and Pepper to taste
Cream or Milk (optional)
Gently cook the sliced onions, leek and celery in the butter in a thick bottomed pan.
Once softened add the flour and stir and cook over a gentle heat to make a sandy texture and then remove from the heat and leave to cool slightly.
Next gradually mix in the hot stock, one ladle at a time and stir to a boil.
Add the well washed and sliced mushrooms and salt and pepper according to taste, then simmer for 30-45 mins, skimming the foam off the top as necessary.
Once cooked and cooled slightly put into a food processor or I use a handheld blender till smooth.
Re boil and correct the seasoning then add cream or milk if you like and then serve with fresh bread.
