My proper American-style macaroni cheese recipe is beautifully gooey and very tasty and cheesy. You will love it!

300g of macaroni pasta
50g butter
1 tbsp olive oil
50g of plain flour
1 tbsp mustard powder
500ml of milk
150g of mature cheddar, grated
2 crusts of bread
65g of parmesan, grated
5g of salt
1 pinch of black pepper
4 tomatoes, sliced
Salad to serve with


Preheat the oven to 200°C.
Put the 2 crusts of bread into a food processor to make the breadcrumbs.
Bring a pot of lightly salted water to the boil. Add the pasta and cook for 8-10 minutes.

Drain the pasta and run under cold water for 30 seconds to halt the cooking process. Mix in a little bit of olive oil – this will stop the pasta from sticking together.

For the cheese sauce, melt the butter in a large ovenproof saucepan over low heat, then add the flour and turn the heat up to medium, stirring all the time, until you get a paste – this is your roux then add the salt, pepper, mustard powder and flour, stirring well. Slowly whisk in the milk a little at a time. The sauce will start to thicken as it comes to the boil. Simmer for 2 minutes and then remove from the heat. Add the grated cheeses and stir until fully melted.

In a large bowl, combine the pasta with the sauce and mix well. Transfer to a casserole dish and use a wooden spoon or palette knife to smooth the surface (You want it to be slightly too wet because it will thicken up again in the oven, so add a splash of water if needed). Arrange the sliced tomatoes on top, in your chosen pattern and then sprinkle the breadcrumbs over the top. Place in the oven for 20-30 minutes, until golden, bubbling, crispy and delicious. Serve your macaroni cheese in the centre of the table, with your lovely salad.
