Kebab Shop Red Cabbage Recipe

How to make kebab shop salad
½ Head of red cabbage, finely chopped
1 tbsp. Salt
How to make kebab salad dressing
50ml Olive Oil
½ Juice of Lemon
1tsp Salt
1 tsp Pepper
Instructions
Remove the white core and shred the cabbage as finely as you can using a sharp knife or by using a food processor.
Wash it till the water is no longer coloured and runs clear, as this will negate the ‘ burning’.
Sprinkle the 1 tbsp. Salt and squeeze the salad with your hands. Put aside for at least half an hour.
Wash and drain and place in a serving bowl.
Mix the olive oil, lemon juice, salt and pepper in a bowl, then pour over the salad and mix well and then rest in the fridge for at least 30 minutes before serving.

Wondering how long this keeps?
This will keep in the fridge for about 5 days, otherwise, I freeze the leftover sauce and defrost when I need it!
