I love this fresh tomato soup recipe and you can use the tomatoes that are too overripe leftover from the week for this recipe. It is even quicker if you have a soup maker ( I have a Morphy Richards 48822 Soupmaker – Stainless Steel) where you can just put all the ingredients in an let it do its stuff!!

Ingredients for Fresh Tomato Soup Recipe
1 onion, roughly chopped
1 carrot, roughly chopped
50g Plain flour
1kg fresh ripe tomatoes, eyes removed, well washed, halved
1 litre of Vegetable stock
Salt and Pepper, to taste
Tomato Puree, if needed
Melt the butter in a thick bottomed pan, then add the chopped onion and carrot and brown slightly.
Mix in the flour and cook to a sandy texture, then remove from the heat and allow to cool slightly.
Next, return to the heat and gradually add the hot stock ladle by ladle and stirring well each time.
Stir to a boil and add the ripe tomatoes squeezing them into the pan and seasoning to taste. Simmer for a 45mins-1 hour and skim the foam off as required.
Sieve the soup and then return to a clean pan, correct the seasoning and consistency and if colour is lacking add tomato puree and reboil.
Serve straight away with a nice crusty roll. Enjoy
If the soup is too sweet or sour, reduce 100ml vinegar and 35g castor sugar to a light caramel and mix into the completed soup.
