125 g unsalted butter
100 g muscovado sugar
4 tbsp golden syrup
1 tsp bicarbonate of soda
325 g plain flour, plus extra for dusting
1 tsp ground ginger
1 tsp mixed spice
200 g icing sugar sifted, plus extra for dusting
Preheat the oven to 170 degrees Celsius and Line baking trays with parchment paper.
Melt the butter, sugar and syrup together in a medium saucepan, stirring occasionally and then remove from the heat.
Sieve the flour, bicarbonate of soda and the spices and then stir in the melted butter ingredients to make a stiff dough.
Turn out onto a lightly floured surface and roll out to about a 5 mm thickness.
Stamp out your desired shapes and place on the lined baking trays, leaving plenty of space between them.
Chill for 10 minutes until they are firm.
Bake for 12-15 minutes until the biscuits are a light golden brown, then transfer to a wire rack to cool.
Meanwhile mix together the icing sugar and egg white until smooth then spoon into a piping bag.
Decorate the biscuits with your unique designs with the icing and dust with icing sugar.
