Ingredients for Chicken Fajita Quesadillas Recipe
2 tbsp olive oil
3 chicken breasts, thinly sliced
1 red pepper, thinly sliced
1 green pepper, thinly sliced
2 onions, thinly sliced
200g cheddar cheese, grated
1 tsp pepper
1/2 tsp salt
In a frying pan or griddle pan, heat 1 tbsp of the olive oil and then add the chicken to it and season with salt and pepper.
Cook the chicken for 5 to 10 minutes until it’s fully cooked and no longer pink and slightly browned.
Remove the chicken from the pan once cooked and allow to cool.
Add another tbsp of olive oil to the pan.
Next, add the sliced onions and cook for a couple of minutes until it’s slightly translucent and soft.
Then add the sliced peppers and cook for a couple more minutes so the peppers cook until slightly soft and then remove from the pan and allow to cool.
Get a tortilla and on one half, place some chicken, some of the cooked peppers and onions and some grated cheese and then fold it over.
Do the same for however many quesadillas you need. You can do these in advance a refridgerate.
When you are ready to serve, heat a clean frying pan without any oil on medium heat.
Place the loaded tortilla in the hot pan and cook until browned on both sides and you can see the cheese is melting. Repeat for again for the rest.
Remove from pan and cut into triangular quarters.
Serve this with some sour cream, salsa and lettuce.
