A Cajun Chicken Sandwich is great on a weeknight if you want a quick but filling sandwich to fill your belly whilst settling down in front of the TV. This is a great recipe!

Ingredients for Cajun Chicken Sandwich Recipe
2 chicken breasts
1 ripe tomato, sliced
1 tbsp mayonnaise
Iceberg Lettuce washed and sliced
Cajun spice mix
1 tbsp oil
Sliced cheddar or Swiss cheese (Optional)
2 ciabatta rolls
Firstly, wash and ‘butterfly’ (slice in half) the chicken breasts and place on a plate.
Sprinkle each side with the Cajun spice mix, lightly if you don’t want it too spicy.
Heat the oil in a frying or griddle pan and fry the seasoned chicken breasts on each side until cooked through.
While the chicken breasts are cooking slice the ciabatta rolls in half and spread mayonnaise on one side.
Next place the sliced tomato, coleslaw and lettuce on top of the mayonnaise.
Once the chicken has cooked place on top of the roll with the salad and cover with the sliced cheese.
Place under a medium grill until the cheese has melted slightly and then place the top of the roll and cut in half and serve.
I normally serve this with seasoned chips or a jacket potato. Please feel free to add want you want to this sandwich and let me know what variations you come up with.
