This Cajun Chicken Pasta Recipe is a copy cat of the one from my favourite American restaurant and it tastes great! Try it and let me know how it goes.

2 tbsp olive oil
4 chicken breasts, butterflied
Cajun spice mix, to coat the chicken
One red pepper, diced
One green pepper, diced
1 onion, finely chopped
1/2 tsp salt
1 tsp pepper
1/2 tsp cayenne pepper
4 cloves of garlic, crushed
400ml single cream
400ml V8 Juice
600ml chicken stock
400g penne pasta
2 spring onions, chopped
Parmesan cheese, freshly grated
2 tbsp Parsley, finely chopped
Heat oil in a large pot over high heat.
In the meantime coat the chicken in the cajun spices.
Then add chicken and cook until cooked and slightly blackened on the outside on both sides.
Take the chicken out and keep the chicken warm in a low oven until ready to serve.
Next add the diced peppers and onion into the remaining oil, cooking until the onion is translucent and then add the crushed garlic and stir.
Add the cream, V8 juice and chicken stock and bring to the boil and then add the pasta, stirring constantly to prevent any pasta from sticking.
Cook for about 10 minutes until pasta is cooked and the sauce has reduced to a thick sauce that coats the pasta.
Serve by placing the pasta into warm bowls, slice the chicken breasts and place on top of the pasta and then garnish with parmesan cheese and parsley and enjoy!
