This version of a Buffalo Chicken Salad Recipe is the best salad if you love buffalo chicken but would like a slightly healthier recipe version! Enjoy!

300 ml Frank’s Hot Sauce
2 tsp brown sugar
1 tsp paprika
2 tbsp Butter
3-4 chicken breasts cut into strips
150 ml ranch dressing
1 romaine lettuce, chopped
A 200g bag of mixed lettuce
1 red onion, thinly sliced
2 carrots, grated or sliced
2 celery sticks, chopped
100 g cheddar cheese, grated
Salt and Pepper, to season
Heat and then coat a griddle pan with cooking spray or olive oil.
Season the chicken with salt and pepper and then place the chicken tenders on the hot griddle pan and cook over medium-high heat for 4 minutes per side or until cooked through.
While the chicken is cooking add the buffalo sauce, butter and brown sugar to a small sauce pan.
Place it on the stove on a medium heat and let it bubble away for about 3 minutes or so and then remove from the heat.
When the chicken is fully cooked, remove from the heat and chop into small pieces and then pour the buffalo sauce over the chicken and toss to coat.
Chop the lettuce, onion and celery, and grate the carrots and then put them in a large bowl and add the grated cheese.
Pour over the ranch dressing, a little at a time until everything is fully coated.
Serve the salad into chilled salad bowls and then layer the cooked chicken on top and serve.
